Wild rice , meat loaf wellington

  • Meat loaf wellington!!

  • OK ! I mixed a few things here but who says there’s any rules to cooking , its your kitchen and you can do whatever you like in there, mix flavours,textures,play around with mixing new and traditional recipes

  • My kids love ground beef so heres the meatloaf wellington with wild rice which i love and boys almost didn’t realize there was rice in there, and once they did, they still loved it ,so that’s a win!I used my all time favourite and then theres some mushrooms that made it without any knowledge of being there😅and a hint of BBQ flavour with the sauce inside and caramelized BBQ sauce on top!!😋😋

  • Rice:

  • i cooked the rice as I always do ,in my handy 1 cup water ,1 cup rice 1 tsp salt and 1/2 tsp black pepper with a drizzle of olive oil and cook at high pressure for 28 minutes, and let release naturally and then fluff with your fork,you can skip salt if you like

  • For carrots i diced them finely but if you dont like any texture you may want to sauté them 5-7 minutes in little butter or oil before adding them to meat loaf

  • Ingredients:

  • 1 lb. ground beef

  • 1 cup cooked wild rice

  • 1 small onion,finely chopped

  • 1 cup mushrooms finely chopped

  • 3-4 small carrots finely diced

  • 3 cloves minced garlic

  • 1 tablespoon dried fennel seeds

  • 1 tablespoon dried thyme

  • 1/2 tablespoon dried rosemary

  • 1 teaspoon oregano ,i used fresh or use (1 teaspoon dried)

  • 1/2 teaspoon salt( use more if you didn’t add in rice)

  • 1/2 tsp cayenne

  • 1 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 2tsp onion powder

  • 1 tbsp Italian seasong

  • pinch of ground nutmeg

  • eggs, whisked

  • 2 tablespoons tomato paste

  • 1 tablespoon maple syrup

  • 1/4 cup ketchup

  • 1/2 cup good BBQ sauce(reserve 1-2 tbsp for using on top of meatloaf)

  • 2 tbsp Worcestershire

  • 1 teaspoon dijon mustard

  • 1/4 cup breadcrumbs, I used panko

  • 1 tablespoons heavy cream

  • 1 package of puff pastry sheet thawed,

  • Preheat the oven to 350ºF grease your loaf pan

  • place all ingredients in bowl and mix with your hands

  • Put the puff pastry in the pan with its edges hanging over the sides of your pan

  • Put the meat in the pastry and press down to get all sides,I didn’t use all the meat as it was only 4 of us eating,but you can use all of it

  • Now cover the top with the hanging edges and wet your hands to smooth it if you wish!

  • Bake at 350ºF for 40 -45 minutes.

  • Now brush the top with the reserved BBQ sauce

  • Bake another 8-10 minutes keeping an eye , once sauce caramalized Remove from the oven and let it sit for 5- 10 minutes before serving

  • I served with a simple arugula and pomegranate salad but the possibilities are endless 😜
