Moroccan chicken with sweet potatoes

* 1 full chicken with skin on

* 1/2tsp black pepper

* 1 teaspoon ground cumin

* 1 teaspoon cayenne pepper

* 1 1/2 teaspoons salt

* 2 tablespoons olive oil

* 2 tesspoons paprika preference is smoked paprika

* 1 onion chopped

* 4 cloves garlic, minced

* Ginger 1tsp paste ,used fresh ginger if available

* Juice of 11/2 lemon or lime

* 1/2 cup olives

* 6-8 dates, remove pits and slice longitudinally,i dont know if we can use this term in food🤷🏻‍♀️

* 1/2 pomegranate

* 1 large sweet potatoes cut in wedges

Remove the spine of chicken by cutting along the sides of spine

Put that in 2cups water and put on stove to make broth while u prep chicken

Put all the dry spices together and rub well

Let it sit for half hour or more uncovered at room temperature

Heat oil in pan put the chicken breast side down first,oil should be hot

Cook for 4-5 minutes till seared,make sure not burns!

Switch to other side after 4-5 min add chopped onion and keep cooking till onion soft ,then add the potato wedges around chicken,pour the broth u made over the potatoes and any spices left from chicken over potatoes,cover and cook for half hour or so

Can if too much water up the heat and dry it or move the liquid into another pan and evaporate on high heat

Dont move or touch the chicken and veggies

Then add it back to chicken pan when reduced

Add the dates and olives fry few minutes,there should be some liquid in the pan

Put this in oven at 450 for 10 minutes till cooked through

Garnish with mint ,pomegranate,grilled lemons

This is seriously delicious!!
