Ravioli with sun dried tomatoes,cherry tomatoes and spinach in rose’ sauce

Easy and yummy week night dinner

i made a big serving as my kids will devour this ,you can half the ingredient amounts if making smaller batch.

  • Ravioli-2 packs i used pasta romas spinach and cheese ravioli each pack was 550gm from costco

  • Sun dried tomatoes in oil ,1/2 cup

  • Spinach 2 cups

  • Parmesan 1/2 cup

  • Heavy cream or milk 1/2-3/4 cup

  • Salt 3/4 tsp

  • Garlic 2 cloves smashed

  • Black pepper 3/4 tsp

  • Chilli flakes 1/2 tsp

  • 3/4 can tomatoes, i had roma whole tomatoes in sauce and just broke them as they were cooking u can use diced tomatoes for 3/4 fresh tomatoes and 2tsp tomato paste

  • 2 sprigs fresh thyme and oregano or use 1tsp each of dried herbs

  • Butter 2tsp

  • All purpose flour 3 tsp

  1. Heat a pan ,i used oil from sun-dried tomatoes about a tsp and seared the cherry tomatoes till little charred the remove and put aside

  2. Add 2tsp butter and garlic till fragrant add the flour and cook 2 minutes or so then add the canned tomatoes cook 5-7 minutes till oil separates ,

  3. Add sun-dried tomatoes and spinach cook 1-2minutes add the parmesan and cream.Add more cream or milk and cook to ur desired consistency

  4. Boil ravioli according to package directions

  5. Drain and put in serving dish

  6. Add sauce on top and toss a bit add more parmesan and cherry tomatoes on top
