Pasta with Mediterranean/middle eastern flavours
I wanted something easy for dinner tonight as jet lag is going strong!
I usually have middle eastern spices in pantry so this was easy to make
For chicken :
15-16 leg pieces
11/2tsp zataar
1 tsp shish tawook spice(store bought,or make your own )
1tsp chilli flakes
1tsp salt
1tsp garlic powder
Juice of 1 lemon
11/2 tbsp olive oil
Preheat oven to 400 , roast gor half hour and reduce heat to 350 and cook another 15-25 minutes till skin crisp
Remove any liquid in the pan in the last 10 minutes and reserve that
For pasta:
1package of pasta
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp chilli flakes
Greek herb mix 1 tsp
Dried parsley 1tsp
Butter 1tbsp
Mozzarella cheese 1/2 cup
Boil pasta according to package instructions and reserve 1/4 cup of that water you boiled it in
Drain pasta
In your pan ,Add the reserved liquid from chicken,1tbsp butter , salt ,pepper and red chilli flakes to taste,1tsp parsley,1 tsp greek herb mix,I used my fav from
Cook this for 1-2 minutes,add pasta till little sauce left
Add half of cheese in now!
Pour in baking dish and add rest of cheese on top
Bake at 350 for 10 minutes or till cheese melted
Add the chicken on top and sprinkle more parsley if you like
We ate with salad , which was basically just me as boys didnt even look at the salad😳
