Veggie burgers

Again trying to use some up leftovers recipe

11/2 can black beans drained

1sweet potato cooked/boiled/baked

1cup cilantro

1small onion diced

3green or thai chillies/skip if not want spicy

4 cloves garlic

1/4 cup Parmesan

1/2 cup oat flour/i just pulsed oats in blender till a bit of powder/flour consistency,so if doing that use 3/4cup oats

1/4 cup bread crumbs/panko

3/4 tsp salt

1/4 tsp chilli powder

1/2tsp black pepper

1tsp paprika

1tsp cumin powder

  • In food processor add beans,garlic and onion

  • Add cilantro,sweet potato,chillies and pulse again till mixed

  • Put this is a large bowl add the rest of ingredients and mix

  • Pan fry with olive oil till crispy both sides

  • Serve in buns or eat with salad and fries

  • The verdict was me and mazhar loved these ,Ibrahim liked them and mustafa had his nose in the air as soon as he heard “veggie burger”
