Veal milanese with a flavourful twist



  • 1lbs thin veal cutlets ,pound them if a bit thick

  • Salt and black pepper

  • Chipotle pepper powder 2tsp or chilli powder (use a bit less)i wanted flavour but not to take away too much of the actual taste

  • Garlic powder1/2tsp

  • Onion powder 1/2 tsp

  • Mixed Dried herbs 2tsp ,(i used the clubhouse salad mix )

  • Flour 3/4cup

  • Breadcrumbs 1cup

  • 2eggs lightly beaten

  • Lemon juice 1tsp

  • Butter for frying

Season the veal with salt and pepper i used3/4tsp each ,add 1tsp chipotle powder and garlic onion powder ,dried herbs and lemon juice ,let marinate 15min at room temperature

In separate plates add bread crumbs and flour and in a third shallow pan the eggs

Also divided the rest 1tsp chipotle,herbs and some salt and pepper yo both crumb and flour ,which is not authentic any means😬

Dip veal cutlets in flour then dredge in eggs then breadcrumbs and put aside till all are done

Use a cast iron pan if available,heat well

Then add butter and fry 2 cutlets at a time for 2 -3minutes each side ,i cooked 2min per side as i had thin cutlets

U can keep oven On at200F just to keep them warm while making the rest

At the end add ricotta of mozarella on top if wanted

CHERRY TOMATOES AND BASIL SALAD

cherry tomato basil salad which is basically both said ingredients with oliveoil,balsamic vinegar little salt and pepper and let marinate while doing the rest of cooking just used approximate measurement

GARLIC AND HERB BUTTER PASTA

  • Pasta of choice half pack

  • Salt 1/2tsp

  • Pepper1/2tsp

  • Garlic cloves 5 minced

  • Butter 4tbsp

  • Lemon juice 2tsp

  • Fresh herbs i used 1cup cilantro,few sprigs rosemary ,thyme and oregano

And 3 sage leaves

Cook pasta accordingly to package directions and drain

Heat butter add garlic fry a minute or two add all herbs till little crispy

Add salt and pepper and lemon juice and turn off the stove

Mix into pasta reserve 1tbsp for garnishing at end

I put pasta in serving added veal on top and the herb butter and the cherry tomato and basil salad ,u can put the dressing in if u want but i didnt want balsamic to overwhelm the herb and garlic taste

This was seriously delicious,that big bowl u see,nothing is left now🤷🏻‍♀️
