Qeema naan
For dough:
- [ ] 3-31/2 cup all purpose flour
- [ ] 1tsp salt
- [ ] 1 pack or 21/4 tsp instant yeast
- [ ] 1tbsp sugar
- [ ] 2tbsp olive oil
- [ ] 2tbsp butter at room temperature
- [ ] 1egg at room temperature
- [ ] Sour cream or yogurt 4tbsp
- [ ] 1cup warm milk
- [ ] 1/2 tsp baking soda
- [ ] Some more butter to spread on naans at the end
For stuffing:
- [ ] Minced meat (raw)any kind finely ground,i used veal 1kg
- [ ] Salt 1/2 tsp
- [ ] Chilli powder 1/4 tsp
- [ ] Cumin 1 tsp
- [ ] Corriander powder 1tsp
- [ ] Garlic 3cloves minced
- [ ] Ginger 1inch minced
- [ ] 1/2 onion grind in chopper and drain liquid
- [ ] 2green chillies mince with garlic
- [ ] Garam masala 1/4 tsp
- [ ] Cilantro chopped half cup
- [ ] Shan chaplee kebab mix 2tsp
- [ ] If not using shan ,add extra 1/2 tsp each of salt, chilli ,cumin powder and garam masala
- [ ] Mix all the stuff with ur hands in qeema
- [ ] For dough mix everything in stand mixer or knead by hands
- [ ] Cover and let rise for 1-2hrs in warm place
- [ ] Divide dough into 8-9 balls
- [ ] Roll into 5-6 inch flat disc
- [ ] Add the qeema mix on it all over in thin layer
- [ ] Put a slit upto mid on one half and roll it over into a cone shape
- [ ] Pinch ends to close and press /squish to make a round ball again
- [ ] See pic to understand as i dont think im explaining it that great😁
- [ ] Cover let rest 10-20 min
- [ ] Roll it out into desired size 6-8 inches usually
- [ ] Wet top surface with water slightly
- [ ] Sprinkle sesame seeds
- [ ] Using finger tips poke into the bread to make tiny pokes ok if few holes
- [ ] So first two naans i baked at 375 for 20 minutes but then I lost my patience as i only have a small oven currently working so i used high broil setting for the rest
- [ ] Use cast iron pan for best results
- [ ] So for broil keep close eye 3-5minutes till golden and for this flip it over another3-5min till gold
- [ ] For baking setting u dont need to flip
- [ ] Spread more butter on top
