Thai red curry meatball soup

This Ive made several times and is always loved in the house and it is versatile and modifiable

You can make it thicker and use as a gravy over rice, or can add noodles into the soup , you can make your own red curry paste, but as you know I love thai food so I always have thai spices in my pantry , works out well in quarantine 😜

And I made do with available stuff, I will put some old pics too! And Ive saved in highlights

For meat balls

  • 2 lbs chicken( I use breasts as I dont like white meat so this is a good way to use it)

  • Garlic 5 cloves

  • 3-4 green onions, chopped,

  • 1 inch fresh ginger, grated

  • 1/4 tsp salt (add more if you like but they will absorb some from soup)

  • 2 Thai red chillies

  • 1 tsp blackpepper

For soup:


  • 21/2 tbsp Thai red curry paste my favourite is

  • 2 cans coconut milk

  • Water same 2 cans or 3 cups , also can use chicken broth

  • 1 tablespoon honey or molasses

  • Fish sauce 1 tbsp or soy sauce

  • 1/2 bunch each fresh cilantro

  • 1/2 bunch basil, chopped

  • 1 bunch or cup of roughly chopped kale/ use any leafy green you like Ive made with bok choy and spinach too

Garnishes(all optional)

  • Handful cilantro

  • Handful basil

  • Small red onion or shallot thinly sliced

  • Limes

  • Thai chillies

Method:

  • 1. Add the chicken, green onions, ginger, garlic, salt and pepper food processor till ground

  • Make small meatballs, you can make bigger if making a gravy

  • 2. Heat a pan with 2 tablespoons oil add the meatballs and fry till golden about 5-7 minutes

  • In the same oil add the curry paste. Cook about 2 minutes. Stir in the coconut milk, water , fish sauce, and honey cook 10 minutes

  • Add the meatballs into the soup. Cook covered on medium heat 8-10 minutes.

  • In a pan fry the kale in little oil , you can do that after the chicken in same oil and keep separate

  • After meatballs cooked add the kale , cilantro and chopped basil

  • Then put any garnishes you like and enjoy!
