Thai meatballs with spicy mango and rice noodles

Im a huge fan of thai foods ,its also pretty quick to make if you have some basic Thai sauces and condiments and i usually always have them in my fridge for the nights u don’t know what to make and can always be fancy with these meals that look like a lot of effort but really aren’t

Maybe one of these days if interest I will put on the sauces/condiments to have in stock for thai dishes

  • Sauce:

In a cup combine these ingredients and 1//3 cup of water mix well and keep aside

  • 4tbsp soy sauce

  • 3tbsp thai chilli sauce(sweet)

  • 1tbsp chilli garlic or sambal sauce

  • 2 tablespoons rice vinegar

  • 11/2 tbsp honey

  • juice of 1 lime

  • 1tbsp corn starc

  • For mangoes:

  • 2mangoes diced into small cubes

  • 1/4tsp salt

  • 1tbsp rice vinegar

  • 1tbsp honey

  • 1/2tbs red chilli flakes or sambel or chilli sauce

  • 2tsp oil i used peanut oil

  • Mix all and set aside

  • For meatballs

  • 11/2-2 pound ground chicken or beef

  • 1 inch ginger, minced

  • 4 cloves garlic,

  • 1/4tsp salt-dont use too much as adding soy sauce later

  • 1/2tsp black pepper

  • Mix everything well and make equal side meat balls made about 15 for me

  • Other ingredients

  • 3 tablespoons oil , i used mix of olive and sesame oil but use whatever u got

  • 1cup sugar snap peas

  • 2 red or orange bell peppers, chopped

  • 3-4 small carrots sliced

  • 1/3 cup peanuts

  • 1/2 cup fresh basil

  • 3 green onions/scallions chopped

  • 1 cup cilantro u can use half cup (i can never have enough of garlic and cilantro)

  • 1 pack rice noodles

  • 2 tablespoon sesame seeds

  • Cooking

Boil your noodles in salted water according to package directions then drain and add 1tbsp of oil you are using and 1tbsp sesame seeds in it and cover to keep warm

Heat your pan add oil and fry your meatballs till brown and little crispy

Add little water cover and cook 10 minutes ,then fry till oil separates,remove from pan

In same pan add the carrots and fry 2-3 minutes then add peas and peppers, fry till cooked but not soft

Add peanuts and fry a minute or so

Add back the meatballs and then the sauce u made early

Cook 3-5 minutes till sauce thick and sticky add some green onions,half cilantro and basil and more peanuts and sesame seeds

Serve with your noodles and top with the mangoes u made b

efore

Garnish with more sesame seeds and cilantro ,basil and peanuts if desired
