Thai green curry with shrimps
Seems like I’m on an asian food binge this week😊
One of you asked for this ,so here it goes
I love it with shrimp but you can add any other meat or veggies of your choice ,the cooking time will need adjustments with meat, you can use home made curry paste and Ive done that in the past but since I discovered this one by Im not willing to spend that extra time or effort into it but if you want a recipe for that let me know and ill share later
1 1/2 pound raw shrimps peeled 2 tablespoon oil /use coconut preferably, I was out so used a mix of olive and sesame oil
4 garlic cloves minced 1 red or yellow pepper sliced 1 bunch green onions , separate green part for later and slice white part longitudinally
1 eggplant sliced half inch thick
Snow peas 1/2 cup 4 ounces green curry paste 1 tablespoon fish sauce 2 tablespoons coconut sugar or regular sugar
1 thai ted chilli sliced and some for garnish
2 cans coconut milk 1/2 cup fresh basil leaves chopped and some for garnish
1 lime sliced for garnish and squeeze on top
Heat the oil in a large skillet over add the garlic. Saute for 30 seconds or so
Add the sliced eggplant and fry for 5 minutes, add peas and red peppers and the white parts of the green onions and cook for 2 minutes
Add the curry paste and fry,for about a minute
Add the fish sauce, coconut sugar and coconut milk and bring to a boil for 5-6 minutes.
Add the shrimp, basil ,half of green onions and thai chilli,turn off the heat and cover. Let it sit for 9-10 minutes, don’t overcook as shrimps turns tough
Pour in a bowl
Squeeze fresh lime juice on it and put on garnishes
Enjoy with your rice, I cooked simple white rice im instant pot today but I also love coconut rice with it too!
