Thai basil chicken meatballs
So I was craving thai basil chicken but costco hasnt had boneless thighs for some time so the only boneless meat was chicken breasts and i really don’t find it too appetizing,so i decided to make that into meatballs so it is juicy and not dry white meat😳
Plus I try to add as many veggies to my cooking as I can ,so some of them is not traditional in thai food
FOR MEATBALLS
2 large chicken breastS
10-12 basil leaves
2garlic cloves
2green onions
1tsp salt
1/2tbsp black pepper
1inch ginger
FOR SAUCE
2tsp rice vinegar
3-4tbsp soy sauce
3tbsp thai sweet chilli sauce
1tbsp spicy chilli garlic or sambal
1/2tsp black pepper
2tsp fish sauce
1tsp thai red curry paste/optinal
OTHER INGREDIENTS
Bell peppers sliced11/2 cup
Snap peas 1/2 cup
3small carrots sliced
Onion sliced 1/2
3garlic cloves minced
1inch ginger minced
Half cup cilantro
1/4 cup basil
Sesame or peanut oil 2tbsp
Mango sliced
Spring onion diced
Mix in food processor all meatball ingredients till fine,make them into equal size balls
In ur pan heat sesame oil fry meat balls 5-7 min till brown then add carrots fry 1-3 minutes then add other veggies garlic snd ginger paste and stir fry till veggies a bit tender
Add all the sauce ingredients and cook till sauce thickens and all cooked
Garnish with mango ,spring onion more basil and thai chillies
Add cashews if u have, I cant as my son is allergic
Serve over rice or noodles
