Tawa chicken
Is responsible for this ,he sent a pic of what he ate a restaurant and than my mind obviously always thinks about food ,so we went out got chicken and chillies as I had to eat it tonight!
Saw a couple if recipes but ended up making my own version,no idea how close it is to authentic taste but we all loved it ,I decided to make it with butter ,as everything tastes better with butter!
2 lbs bone chicken thighs in medium pieces
Green chillies 5-6 use less if u want
Garlic 6 cloves minced
Ginger one inch minced and extra to julienne to garnish
Tomatoes 2 sliced
Butter 2 tbsp
Cilantro half bunch chopped
Lemon 1
Salt 1 tsp
Turmeric 1/2 tsp
Red chilli flakes 1/4-1/2 tsp
Coriander powder 1 tbsp
Cumin powder 1 tbsp
Garam masala 1 tsp
Fengreek/ kasuri methi 1 tsp
So I marinated chicken with half quantities of all the above spices (except fenugreek)and saved the half to add later
Also slice and add 1 green chilli to let marinate, let it marinate for however long you can
Melt butter on your tawa
Add matlrinated chicken
Fry on hit heat for 5-6 min till a bit of colour to chicken
Add tomatoes,fry 1-2 minutes then add the ginger ,garlic and rest of spices
Fry a few minutes on medium heat ,then cover and cook 10-15 minutes
Add little water if you need, i dont like adding any water to my dry chicken dishes, tomatoes give the usual moisture and turning heat low will prevent sticking but if needed ,add water
Once cooked add cilantro and sliced chillies,fry 2 minutes
Add lemon juice ad serve garnished with lemon,chillies,cilantro and julienne ginger
Eat with naan or roti
