Spicy tex mex inspired roast beef

Roast beef my piece was 3.5 lbs
1 jalapeño deseed if not want too spicy
2 red or green chillies
5 cloves garlic
1 small onion diced
chopped cilantro half cu
5-6 small carrots
1 tomato roughly chopped
1.5 cup tomato juice/motts clamato or v8
11/2 tsp salt
1tsp tex mex seasoning
1/2 tsp chilli flakes
1tsp paprika
1 tsp chipotle paste or powder
olive oil 2tbsp
2 tsp corn starch for gravy
mince garlic with jalapeno and chillies
rub the garlic and jalapeno mix on beef
add all other spices , juice and oil
arrange the veggies around the beef
let marinate at least an hour or longer
roast at 375 for about 20-22 minutes per pound of meat, longer if want very well done
once done remove all liquid put in a pan and add 2tsp crn starch and cook till little thick to make gravy
slice the meat serve with gravy and salad or bread
