Softest challah bread

So for those of you who asked for the written recipe

Here it is (video on instagram. @nailamaz)


I looked at a million and one recipes and after some trial and error this is what I love

I used the tangzhong method for the softest bread😋😋

So you make a flour paste with

  • ½ cup water(may need little extra)

  • 3 tablespoons flour

Mix water and flour in a small bowl until smooth Microwave, mixing every 20 seconds, i did once 20 and next time 10 seconds until mixture is like a pudding, (see video in high)I needed to add a bit more water

Dough:

  • Âź cup water

  • 2 ž cups flour, i used all purpose flour

  • 1egg and 2 more yolks only

  • 1 Âź teaspoons instant yeast

  • Âź cup sugar

  • 1 teaspoon salt

Egg Wash:

  • 1 large egg beaten with 1/4tsp salt


In the bowl of a stand or electric mixer or (use your hands)add this paste ,egg ,yolks, water, and oil till mixed

Add flour and yeast.

Use a dough hook and mix on low until all flour is mixed took 3 minutes for me

Let stand for 20 minutes

Now add the sugar and salt to the bowl and mix for 8-9 minutes

Make into a ball ,Oil the pan and dough

Cover and let rise for 2 hours till doubled in size

Press it down to a big rectangle and divide into 4 equal parts

Roll in 4 long strands

Pinch them together at one end and then braid

Always start with right most strand ,over ,under over other strands ,keep that mantra 🧘‍♀️ going ,staying with the right most strand every time !

Theres tons of other ways to do it too, I find this the easiest

Now cover lightly with cling wrap or towel and let sit 2-3 hours

Honestly it was late ,kids were hungry 🤷🏻‍♀️

U get the picture !!so I waited maybe 50 minutes

Now brush on egg wash 2-3 times

Sprinkle sesame seeds if you want

Bake at 385 until the loaf is golden ,took 35 minutes for me

Let cool on baking sheet for ....who am I kidding ! As long as you can can handle it slice it up ,but will be easy to slice if your family lets you cool it down a bit😂
