Shahi tukray bread pudding style😊

Thats our Pakistani bread pudding😊

So eid is around the corner and as Im not a big fan of sheer or kheer etc

And my husband likes shahi tukray and boys ā€œmay likeā€ bread pudding,when I was asked to do a warm dessert for Eid collab/eid ka garam meetha , this seemed like a good option, to try and see what comes out of it!!

Dont skip on frying or bother using a healthy bread , it WILL NOT give the same taste ,just watch your portion size ,if u can!!,I used brioche bread ,you can use any soft white bread if you dont find brioche bread

Start will cooking your milk mix first as it takes time ,and it will be ready by the time you are done with the rest, you can use condensed milk to thicken quicker but I dont like the taste of it personally

Ingredients:

  • 10 -13 Bread Slices

  • 11/2-2cups butter For frying

For sugar syrup

  • 1 cup Sugar

  • 1 cup Water

  • 1 tsp Cardamom Powder

For the Milk

  • 1 litre Milk/no skim milk here!!

  • 1 pinch Saffron

  • 1/4 cup Sugar

  • 1/2 tsp cardamom powder

  • 1/2 cup heavy cream/optional

For topping

  • 1/2cup sliced almonds

  • 1/3-1/2 cup sliced pistachios

  • Edible roses 1/2 cup

  • Any other nuts you like

  • Saffron few strands

Now lets get to cooking!!

  • Heat your butter

  • Cut the bread into halves diagonally.

  • fry the slices till golden brown.,keep a close eye as I burnt a few as was trying to prove that I can multi taskšŸ™„

  • Keep on a paper towel lined plate till all done

  • Stir fry the almonds and pistachio nuts in the same butter till slightly toasted

  • Drain and keep aside.

For the syrup:

Put everything in a pan and cook till syrup a bit thicker


For the milk mix:

  • Heat milk

  • When the milk comes to a boil, lower the heat and add saffron in it. Add sugar and cream

  • Cook on low heat till the milk is reduced to half. Keep an eye I had to clean my stove all over againšŸ™„

Now

  • Pre heat the oven to 350

  • Arrange the bread slices in your dish as you like

  • Add 3/4 of nuts

  • Pour the sugar syrup on top on them

  • Pour the milk mixture over the bread

  • Bake for 15-20 minutes.

  • Sprinkle rest of nuts ,saffron and roses if using.

  • Eat it warm and with friends if you can like I said earlier😜

  • My friend kinda got to be my model as she said her shirt matched my dessert😊and she should be in the picture šŸ˜‚
