Roast beef in tomato sauce

Roast beef in tomato juice

  • 1 chunk roast beef mine was 2kg

  • 2tsp salt

  • 1 tbsp texmex seasoning

  • 1tbsp paprika

  • Turmeric 1/2tsp

  • 1/2tsp cumin powder

  • 2green chillies chopped

  • 3-4olives

  • 4-5garlic cloves chopped

  • Half onion chopped

  • 4-5 carrots

  • Rosemary leaves1tbsp

  • Oregano 1tbsp

  • Thyme 1tbsp

  • Cilantro 1tbsp

  • Half bottle tomato juice or motts clamato(500ml)

  • 2tbsp olive oil

  • Juice of 1 lemon

  • Grapes 1bunch

  • Put everything on beef except grapes and let marinate 1hour or longer

  • Roast in covered oan at 375F for 2-2.5 hours depending on the size of your roast and how well u want done

  • U can use a meat thermometer if u like

  • I roasted 2hours and 20 minutes

  • Last 15 minutes add the grapes in the pan

  • Slice beef snd pour the sauce at the bottom of pan over it, if u want to thicken it u can add cornstarch 1-2tsp to it and cook on pan, i didnt need to thicken it as i like a bit more runny sauce

  • I used spinach salad and roasted baby potatoes as sides
