Ravioli with salsa style sauce
This is a creation of being lazy and whatever is available in the pantry!
Pretty delicious if you ask me! But when can ravioli be badđââď¸
We kept it vegetarian but you can add any protein if you like!
2 packages for 500 gram ravioli of your choice , I used spinach and cheese one from Costco
500 grams chopped canned tomatoes
1 onion chopped into small cubes
Half jalapeĂąo chopped
1/2 scotch bonnet or habanero or any spicy chilli of your choice /deseeded and chopped
Few sprigs of thyme 3-4
1/4 cup fresh basil leaves
1-2 tbsp fresh oregano or 1/2 tsp dried
4-5 garlic cloves minced
1/4 tsp red chilli flakes
1/4 tsp black pepper
1 tsp salt use less if you like
1 cube chicken builon-optional
Olive oil 2 tbsp
2 cups spinach , I used baby spinach
1/2tbsp butter
Boil ravioli according to package directions
Drain and save 1 cup pasta water
Put ravioli back in your pot with butter and spinach , mix and cover lid, I didnât cook as I like spinach like that
In a skillet hear oil, fry onion for 1-3 minutes till soft
Add the jalapeĂąo and habanero fry 30 seconds
Add garlic and fry a minute
,add all herbs and spices and tomatoes fry 3-4 minutes
Add the reserved pasta water and builon if using cover and cook 10-15 minutes,checking occasionally to make sure no burningđ
Then remove lid and dry most of fluids
Put the ravioli in serving dish and spoon over the salsa , add more fresh basil on top, cheese would be good too , but we already had it in ravioli so didnât want to add more!
