Ravioli with peas and crispy corn
Simple easy dinner, I made some modifications to the original recipe
Ravioli ,i used 2 packs of 750gm
Snap peas 2 cups
Corn fresh or canned 2 cups
Garlic 5 cloves minced
1/2 red onion finely chopped
Olive oil 2 tbsp
Salted butter 3 tbsp
Salt 3/4 tsp
Black pepper 1 tsp
Red chilli flakes 11/2 tsp
Fresh Thyme 1tbsp
Basil fresh or dried 1tsp
Chicken bouillon 1cube/optional
Parmesan 1/2 cup
Cheddar cheese 1/4 cup/ optional
Cream 1 cup
Add oil to pan add onion and corn to it fry 5 minutes till corn a bit golden,add the butter garlic and thyme fry till corn is crispy add peas salt pepper,chilli flakes , dried basil and bouillion if using and fry 2-3 minutes , remove some corn now to put on top and then add cheese and cream till boils and a bit thick add more cream or milk if too thick
Add ravioli to pan stir carefully and garnish with more fresh thyme , basil and the crispy corn you saved!!
