Plum cardamom cake

Plum cake

So this is the simpler but I think tastier plum cake ,The cardamom gives it a delicious delicate flavour but u can skip that if u don’t like it or dint have it available

Can be eaten with ice cream warm or with ur tea or coffee

ingredients

  • 1–1/2 cups all-purpose flour

  • 1–1/2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1/2teaspoon ground cardamom

  • 1/2 cup butter at room temperature

  • 3/4 -1 cup sugar(i used 3/4 cup) and extra 2 tablespoons, for sprinkling on top

  • 3 eggs at room temperature

  • 1 teaspoon vanilla

  • 1/4 cup sour cream at room temperature (thick greek yogurt can work too)

  • 2–3 plums, sliced thin or in halves or quarters based on ur liking

  • 1tsp confectioners sugar with 1/4tsp of ground cardamom for dusting at the end

  • Add all dry ingredients except sugar in a bowl and mix ,leave aside

  • Pre heat oven to 350F

  • Cream butter and sugar in mixer till fluffy

  • Add eggs ,vanilla till mixed,add sour cream

  • Add dry ingredients till just mixed

  • Pour in a greased baking pan ,i used an 8 inch pan ,u can also use springform pan

  • Arrange or throw on plums at top😊 if u do thin slices will need less baking time

  • Press them a bit into the batter but u should still see the tops,see last picture

  • Sprinkle 2tbsp granular sugar all over

  • Bake at 350 for 40-60 minutes

  • As plums can take a bit longer to took

  • Check at 40 minutes with tooth pick if still soft add cooking time ,took 60 minutes for me

  • Once cooled remove from pan and dust with cardamom and icing sugar mix
