Paratha rolls


Lachha paratha and paratha rolls

- [ ] 11/2 cups whole wheat flour

- [ ] 21/2 cups all purpose flour

- [ ] 3 tbsp samolina/sooji

- [ ] 2tsp salt or less as per ur taste

- [ ] 2tbsp sugar

- [ ] 1cup warm milk or use water if u want

- [ ] 1/4 cup melted butter

- [ ] Another 3-4tbsp butter melted add 1tsp all purpose flour and make a paste

Usually it’s better with all purpose flour but i like the little texture with whole wheat so i added that

Knead it by hand or in ur mixer

Cover and leave at room temperature for half hour or longer

Then make equal size dough balls ,made 8 for me

roll each out into round flat bread

Brush on a bit of softened butter and flour mix all over on top surface

Using pizza cutter cut longitudinal lines

Put them together on top of each other and then then roll it into a circle

Then roll out or just use hands to make it into round flat bread again

U will get more layers if u just use ur hands but 🤷🏻‍♀️

Then cook on hot cast iron pan with little or lotta butter while cooking till its nicely cooked and brown

U can break it a bit to make more layers by using tongs and shake it a bit

I always use salted butter for my parathas as i love the taste😊

For the filling use whatever u want

I had leftover chicken so wanted to use that

- [ ] 11/2 cups cooked chicken cut in small bite sized pieces

- [ ] 2small tomatoes diced

- [ ] Half onion thinly sliced

- [ ] 1tbsp oil

- [ ] Bell pepper julienne sliced

- [ ] Garlic 2cloves minced

- [ ] Cilantro 1/2cup chopped

- [ ] 1green chilli diced

- [ ] Shan tikka seekh kebab masala 1/2tbsp

- [ ] If u don’t want to use shan then add salt pepper,red chilli and cumin powder maybe 1/4-1/2tsp each ,my chicken already had spices so i didnt

- [ ] For sauce i used mint chutney i had already ( handful mint and cilantro,green chilli,garlic 1clove all in blender then add salt to taste and yogurt)

- [ ] And the secind sauce was a mix of garlic,mayonnaise and hot sauce all just mixed together

Cook tomatoes in oil when soft add garlic fry 1-2 minutes,add 1green chilli and then spices and everything else,add little splash of water if two dry ,cook 2-3 minutes and add chopped cilantro and mix

Fill paratha will this filling once a bit cooled add lettuce/greens,more onion if u want and both sauces and wrap and hold with toothpick

It was really yummy and amazing,loved the parathas this way but is a bit of extra work would work simply fine with regular parathas too
