Mango cake with cream cheese frosting
This is seriously delicious,especially if you love mangoes!!and i dont like whipped cream frosting even though its lighter , so I made the cream cheese frosting and the flavour combination is ahmaaazingg...
Make sure the mangoes are ripe even a little over ripe is good
For the top if you are decorating then a bit of ripe but firm mango is good but for the inside mushier the betterš
It is a very easy recipe with few ingredients,definitely a must try!
For cake:
6 eggs at room temperature
1/2-3/4 cup sugar, u can easily use 1 cup , i dont like too sweet cakes
1cup all purpose flour
1/2tsp baking powder
For filling:
half cup mango puree (just blend 2mangoes or use canned version)
2mangoes thinly sliced shape doesnt matter u wont see it
Frosting
300 gram cream cheese /a little more than half of the 500gm container , make sure is at room temperature
3/4 cup butter at room temperature
1/2-3/4 cup icing sugar again go with upto 1-11/2 cup depending on your taste!
Vanilla 1tsp
Process:
Add eggs to your mixer, u need a mixer unless you are ok with your hands numb by the end š
Mix them till all blended

Add sugar to it gradually and beat for 8-10 minor longer at high speed
This needs to almost quadruple in volume and has to be thick , not runny at all otherwise cake wont be airy
add flour and baking powder in small batches till all mixed
Bake at 360 in three 6 inch or two 8 inch pans lined with parchment paper and sides greased for 25-28 minutes
Do the tooth pick test to check if fone
Once done remove cakes and let cool completely before icing
For frosting whip everything at medium speed till fluffy ,took about 5 minutes for me
For assembly, put cake on stand or turntable add 2-3 tbsp of mango puree then sliced mangoes over it
On other cake layer add cream cheese frosting and put that side over the mango(facing each other)
Repeat layers and frost the outside of the cake anyway u like
I did linear lines with offset spatula yesterday and added some mango puree for colour in few spots and topped with some piped frosting and puree, today i smoothed and put a pattern on the sides and topped with fresh sliced mangoes and thyme!
