Lahori kulcha/roghni naan
Amazing soft and delicious naan
Try not to eat too much , if you can resist 🤪they are quite rich!
All purpose flour 8 cups ,yesss .....8!!!😬
Butter melted 3 tbsp
Warm milk 3 cups
Salt 1 tbsp
Sugar 1 tbsp
Yogurt 2 tbsp
Powdered milk 6 tbsp
Baking soda 1 tsp
Instant yeast 1 pack or 21/4 tsp
Sesame seeds 3 tbsp or more
1/4 cup melted butter for brushing the tops
1 egg yolk beaten with 1tsp water to brush on top/ optional
Make the dough by adding all except last three ingredients in either your mixer or hand knead ,add a bit more milk or warm water and/or flour as needed ,dough should be slightly sticky,and let rest covered in a warm place 3-4 hours or till doubles in size in an oiled bowl.
Preheat an oven safe cast iron pan or tawa on stove and also turn your oven on at 400 F
Make the dough in 6-8 equal size balls
Then roll it out into flat round discs 5-7 inches using your hands (see highlights)edges should be thicker ,see story or highlights(roghni naan) on how I did it ,or just use a rolling pin and then press in the centre with a plate smaller than the naan so the centre is depressed and edges are thicker and a bit raised
Using your finger tips or a fork poke into the centre of naan to make indentations or small holes(see highlights)
Brush melted butter and sprinkle sesame seeds
Brush egg yolk on edges and a bit on middle of naan , that gives a nicer colour
Put on heated pan ,cook till the underneath surface is a bit golden
Dont flip
Now put that with the pan (or use another sheet or pizza pan)in the oven and cook till browned
You can choose to cook it fully on the pan but with my several experiments I found this gives the best results for me
Enjoy!!! You can choose to make them a bit smaller ,I made six and each naan was a good size
