Jalapeño cheddar chicken
This is one of those that may not qualify as “recipe” as i was cooking late and just wanted to use whatever was in the fridge
But kids loved and and wanted more,but they love anything with cheese 😁
Adjust your quantities as appropriate
3 skin on bone in chicken thighs
2tbsp olive oil
2 jalapeño diced
11/2cup peppers i used mix of red,orange and yellow(leftover from yesterday’s stir fry!shh...)
1/2cup corn
1/2 cup red bean ,use more if u want
Fresh oregano 1tsp
1 lime or lemon sliced
Cilantro 1/2cup chopped
1 tsp salt
1tsp pepper
1 cup shredded cheddar cheese
Cooking:
Season thighs with salt and pepper on both sides
In oven safe pan heat olive on stove add lime slices and half the jalapeño,once little charred add the chicken fry 3-4 minutes each side till browned ,add half cup water and cover and cook for 20 minutes till chicken done, i didnt add any other spices as I wanted the jalapeño taste to stand out, you can add paprika, garlic etc
Turn your oven on to high broiler setting
Once chicken done and oil separates add corn and fry till slightly charred
Add beans ,peppers , rest of jalapeño and oregano, stir fry 2-4 minutes till peppers cooked
Add more salt if needed
Add chedder on top
Now put the pan in the oven ,broil 2-3 minutes till cheese melted
Add cilantro and more jalapeño to garnish
