Harissa chicken with roasted potatoes and plums

This was very delicious and i was just experimenting with flavours here

The sauce was so good with sweetness and tartness of plums and spice from the harissa , we had dinner rolls with it but can be great with rice

I made it easy , one pan meal ,was a busy day at work ,so got home late ,so u can see the lighting in my pic isn’t great as it was later than usual we had dinner

Harissa as you probably know is a North African chilli spice

I used harissa mix with some of other spices and the flavour was just amazing,i even ate a piece of white meat ,it was that flavourful😊

I didnt have time to marinate for long so before and after putting the spices on chicken i poked it a lot with fork to get the flavour in

  • 1 chicken i removed the spine to make it easy like spatchcock

  • 4-5 plums sliced into quarters

  • Baby potatoes 2 cups

For the marinade:

  • 2 tbsp olive oil

  • 2 tbsp harissa spice mix

  • 1/2 tsp red chilli flakes,skip if you font want spicy or u have spicy harissa mix

  • 11/4 tsp salt

  • Fresh parsley 1/2 cup chopped finely

  • Rosemary 1 tsp

  • Garlic 6 finely chopped

  • 1 tsp smoked paprika

  • 1 tsp paprika

  • 1 tsp black pepper

  • Dried parsley 1/2 tsp

  • Juice of 1 lemon

Mix this all to make a paste and then get that all over chicken and under the skin

Let sit if u can for an hour

Heat oven to 425F

Put chicken in sheetpan and place in oven

Put the potatoes in the pan with marinade so they absorb some flavour

Cook chicken 20 minutes

Then reduce heat to 375 add the potatoes and cook another 25 minutes covered this time

Add plums and again increase temp to 400 and cook 10-15 minutes uncovered till nice colour and potatoes and chicken are done

You can cover if browning too quickly and chicken not done

Serve with rice or bread
