Grilled peach salad
Easy and very very delicious summer salad with warm peaches and crispy greensđđđ
Dressing:
1/2tbsp olive or grape seed oil
Salt and pepper 1/4-1/2 tsp each
Apple cider vinegar 1 tsp
Lemon or lime juice 1 tbsp
1tbsp fig preserves/alternative can be honey or maple syrup or sugar
Dried mint 1 tsp
Just mix everything
Salad ingredients:
3 peaches slice as you like brush with oil
1/2 cup berries of choice I used raspberries and blackberries
1/2 red onion thinly sliced
Lettuce of choice 2 cups
Spinach 1/2 cup
Cucumbers I had 6-7 small ones but I ate some while chopping so I dont know how many actually ended up in the saladđ¤ˇđťââď¸
Fresh mint a handful
Feta or goat cheese as much as you like
Grill peaches on a hot grill or grill pan with little oil till grill marks appear, move only once to flip if possible
Add everything in a bowl and pour dressing on top and enjoy!!!
