Greek chicken and potatoes

Yummy ,quick and easy one pot meal

  • juice of 1 large lemon or lime

  • 4 -5 cloves garlic coarsely minced

  • 4 tablespoons fresh parsley chopped

  • 10-12 leaves basil

  • 1 tablespoon fresh oregano

  • 1 tablespoon fresh rosemary

  • 1 tablespoon fresh thyme

  • 1 1/4 teaspoon red pepper flakes use less if want very mild

  • 1/2 cup olive oil

  • 1 chicken,i only had legs and used 13 legs

  • Baby potatoes halved ,i used 13 ,that was not intentional 😂

  • 11/2 tsp salt and 11/2 tsp black pepper

For salad garbishes

  • Half cucumber diced

  • Cherry Tomatoes halved 8-10

  • Feta 1tbsp

  • Half red onion diced

  • Poke the chicken with fork a bit

  • Add all herbs ,chop them if u want i dont mind seeing my herbs in my food q bit larger so i only chopped cilantro and tore basil leaves a bit

  • Add salt pepper ,chilli flakes,lemon juice and oil

  • Mix well with chicken

  • Add potatoes as well and mix

  • It is better if u marinate chicken a day ahead and if u are organized like that then do that but then dont add potatoes till just before cooking,as I had no idea what i was going to cook qnd wasn’t home till 5:30 i only marinated for an hour

  • In your oven proof pan,i used cast iron pan,add potosi at the bottom of pan

  • Arrange chicken on top and pour the marinade over it

  • Bake for 1 hour-and 15-20 minutes

  • Till juices almost dry and chicken is golden and a bit crispy

  • Once done remove the pan from oven

  • Garnish with salad veggies and feta , i took the pic before added feta🙄

  • Serve on its own or with tzatziki or bread
