my husband is the only one who eats bananas at home and they turn brown quick in this weather so he mashes them in the hopes that banana bread will be madeš ,he asked Ibrahim to make it and he was like baba i think u are consulting the wrong person!!
Anyway ive made banana bread a million times but i love this recipe that has sour cream as it gives it the most moisture to the bread
This makes two loaves as i was making a chocolate chip one for the kids,u can halve the ingredients if making one
1 cup butter, room temperature
2 cups sugar
4 eggs
2 tsp vanilla extract
3 cups all-purpose flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
5 bananas (2 cups mashed)
1 cup sour cream or thick yogurt
6-8dates chopped and 3-4 for top (optional)
Chocolate chips if not using dates 1/2cup
1tbsp granular sugar with1/2tbsp cinnamon powder mix and save to sprinkle at the end before baking
Preheat oven to 350°F and grease the two loaf pans.
In mixing bowl, beat butter and sugar until fluffy. Add in eggs and vanilla and beat until combined.
Add in bananas. Mix until soft and creamy . Add in flour, baking soda, salt, and cinnamon. Stir just until combined, dont overmix Add in the sour cream until mixed
Fold in chopped dates or chocolate chips
Pour into prepared pans add more dates or chips on top
Sprinkle the sugar and cinnamon mix on top evenly which is optional but it gives really nice crunch to top for this moist breadš
Bake for one hour, remove and let cool before cutting.
