Flourless chocolate oliveoil cake

  • 13/4 cup baking dark chocolate, or chocolate chips

  • 1/2 cup olive oil

  • 1 cup sugar use 11/2 if using>70%cocoa chocolate

  • 2 tablespoons almond flour

  • 5 eggs, separated yolks and whites

  • Preheat oven 355F

  • Grease a spring-form cake pan

  • Put chocolate in glass pan and heat in microwave 30 sec to help the chocolate to melt mix and put in for another 30 seconds,repeat till all melted

  • whisk in the oil then two-thirds of the sugar, whisking till it is dissolved

  • Stir in the almond flour a pinch of sea salt and the egg yolks.

  • Put the egg whites into a bowl or in bowl of stand mixer with one third of the remaining sugar. whisk until the whites are foamy then rest of the sugar. Continue until the whites have fluffy and almost stiff peaks

  • soften the chocolate mixture by folding in a big tablespoon of the egg whites, then fold in the rest carefully dont be too aggressive here😊pour in cake pan and bake for 40 -45 minutes. Do the tooth pick test to make sure it’s ready

  • Let it cool then dust with icing sugar

  • As you slice u will get those beautiful cracks on top

  • This is really really good , crunchy top and soft rich and fudgy insides 😋
