Figs and date and honey cake

With cream cheese frosting



INGREDIENTS

  • 12 pitted dates,u can use dried or fresh

  • 6 dried figs

  • 4fresh figs

  • 3 cups water 

  • 1 cup butter at room temperature

  • 1-11/2 cups brown sugar(i used 1cup as u know i don’t like too sweet cakes)

  • 4 eggs

  • 2 tsp baking soda

  • 11/2 tsp baking powder

  • 31/2 cups all purpose flour

  • 2 tsp vanilla extract


FROSTING

  • 11/2cups cream cheese

  • 3tbsp honey

DECORATING:

  • 5-8 fresh figs, halved or sliced

  • Zest of one orange

  • Honey 1-2tsp

  • Fresh Dates sliced 5-6

METHOD: 

  • Pre-heat the oven to 350°F grease a 9 or 12 inch spring form cake pan or a round cake pan

  • Put the dates, dried figs, fresh figs and water in saucepan and bring to boil . Reduce the heat and simmer for 30 -35 minutes till everything soft and mushy should still have little fluid ,Remove the pan from the heat and cool for 15 minutes. Then blend in a food processor

  • Cream together the butter and sugar using an electric or hand mixer. Add in one egg at a time,followed by the vanilla extract. Then add soda and flour and lastly the fig and date puree. Mix till just all blended don’t over-mix

  • Place the cake in the oven for 45-50 minutes or until golden brown and a skewer inserted into the centre comes out clean.Mine got a little over-baked as I was cleaning the kitchen and yelling at my kids to help me clean😬 and it sat in the oven a bit longer ,still tasted great but obviously a little less moist

  • Remove the cake and leave to cool

  • To make the frosting is the hardest part😂u just have to mix the two ingredients in a mixer till smooth and fluffy ,thats hard work ,right!!

  • Spread the frosting on top of the cooled cake.

  • To decorate do what your heart desires ,make it a piece of art or dump everything on it or eat as it is ,u can see i sliced the figs and dates and made some sorta pattern ,lastly drizzle more honey on top and enjoy!!!
