Easy no fuss roast beed

I basically threw everything in the pan and let it cook itself as I only had 10 minutes to spare after work and had to go out again

  • Roast beef chunk mine was 3 lbs

  • 5 -6 sprigs thyme

  • 3 sprigs oregano

  • Buch of fresh cilantro

  • One onion roughly chopped

  • 1 tomato in quarters

  • 3-4 carrots

  • One full garlic i just cut in the mid and left in pan and poked some into the feel making holes with the knife,didn’t peel it but feel free to peel😊

  • 1tbsp paprika

  • 11/2 tsp salt

  • 1 tsp cayenne

  • 11/2 tsp black pepper

  • 1 tsp cumin

  • 2 sprigs rosemary

  • 2 sprigs parsley

  • 1/2 tsp turmeric

  • 2tbsp olive oil

  • Juice of 1 lemon and throw the peels into the pan too

  • 11/2 cup water or any stock you like

  • Bunch if baby potatoes or diced potatoes (add then in last 45 minutes)

  • 1-1/2 tsp cornstarch for gravy

Mix everything except potatoes and put in a covered pan and roast at 350 for 2 and half hours ,add potatoes in last 40 minutes

For gravy i just removed the juices from pan and added 1tsp corn starch and cooked till thickens,2-3 minutes

Slice beef arrange veggies with it and pour your gravy over it!
