Chicken Parmesan
My take on chicken parm,I added chilli flakes and seasoned both the flour mix and the breadcrumbs to give a bit more of flavour,you can totally skip these two things,this was gone in few minutes 😋
2 chicken breasts divided into two equal pieces
Marinate for chicken
1tsp salt
1tsp black pepper
1/2 tsp red chilli flakes
Italian seasoning or dry herb mix 2 tsp
Juice of 1 lemon
Let chicken marinate in this for 30 minutes or longer
other ingredients
1 cup flour(added 1/4tsp of salt,pepper,chilli flakes and herbs/seasoning)
1/2 cup parmesan
1/2 cup panko breadcrumbs (added same seasoning and amounts as in flour)
1 cup mozzarella
1-1/2 cup homemade or good store bought marinara sauce , i used
2 eggs
2tbsp oil for frying
Fresh basil and parsley as required
Spaghetti or pasta of choice, i used1/4 package of
Add flour in a shallow plate
Mix parmesan and breadcrumbs in another plate
Beat eggs in another shallow bowl
Heat oil in pan
Boil pasta according to directions , drain and add little olive oil snd italian seasoning and cover and keep warm
Dredge each piece one by one in flour ,then egg and then crumbs ,pressing well to get a good coating
Then add to pan and fry low-medium heat for 5-7 minutes each side till crispy and golden
Turn oven in to low to medium broil
Put chicken breasts in oven safe dish
Add 1-2 tbsp marinara sauce on top of each piece
Add mozzarella equally on each
Add basil and parsley and broil till cheese melted and little browned
Put pasta in serving dish add chicken on top
Garnish with more parsley and basil
