Butter,herb, garlic chicken and potatoes with arugula and feta salad
This is purely a “use whatever is in the fridge invention “😀
And a lazy mood creation,!pretty much one pan dinner and a dinner and salad in one!!
Perfect after a busy work day on a Wednesday ! I didn’t add any bread today as was avoiding it after eating 4 types of desserts yesterday 😬
But this can be good with a nice crusty bread !
Ingredients;
1 Chicken I used drumsticks
Butter 2tbsp
Garlic minced 6-7 cloves
Baby potatoes halved 10-12
Fresh and dried herbs,(substitute whatever u like)
Fresh Thyme 2tbsp
Fresh sage 1tbsp
Dried or fresh parsley 1 tbsp
Dried basil 1 tsp
Dried oregano 1 tsp
11/2 tsp salt
1 tsp black pepper
1 tsp red chilli flakes
For salad:
Arugula 2 cups
Cherry tomatoes 1 cup
Figs 5-6 halved
Feta cheese 1/4-1/2 cup
1tbsp balsamic vinegar
1tsp apple cider vinegar
1tbsp olive oil
1tbsp honey
1/2 tsp black pepper
Didn’t use salt as has feta
Cooking:
Preheat oven to 375F
Use an oven safe pan and melt butter
Season chicken with 1tsp salt and pepper and sear till a bit browned on all sides
Add sage and garlic and fry a minute
Add potatoes,other herbs rest of salt and chilli flakes
Add 3/4 cup water or stock
Put pan in oven for 45-50 min till chicken browned and most liquid is dry
For salad mix everything for dressing in a bowl and add everything except feta and let it sit 5-10 minutes
Once chicken ready pour the salad and feta on top!
So so good
Im not even going to disclose how many pieces I ate !😀 for the fear of judgement 😂
