Beet hummus,greek salad and greek lemon chicken

Greek lemon and garlic chicken with greek salad , beet hummus and pita

  • 4 chicken thighs

  • 2 tsp greek herbs i use greek herb mix , you can use dried greek herbs separately

  • Fresh oregano 1 tbsp

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 full garlic sliced in middle and remove some cloves to put in chicken, the other half just throw in whole

  • Juice of 1 lemon

  • 1 sliced lemon

  • 2tbsp olive oil

  • Mix everything pushing some of the marinade and garlic under the skin, let sit 30 minutes or longer

  • Bake at 350 for 1hour till skin crispy

Greek salad:

  • 1/4 cup cubed feta

  • 1 red onion cubed

  • 1 tomato cubed

  • 3 baby cucumbers cubed

  • Lettuce or greens if you want , 1 cup

Greek dressing

  • 1/2 tsp dried greek herbs

  • Juice of half lemon

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1tbsp olive oil

  • Mix it all and pour over the salad

Beet hummus:

  • 3 beets boiled and cooled

  • 11/2 cup chick peas , you can pre soak overnight and use raw or if in a rush just drain and rinse a can of chickpeas

  • 3 cloves garlic

  • 1/3 cup olive oil

  • 1/3 cup tahini

  • 1/2 tsp salt

  • Put beets in food processor till soft

  • Add everything else and mix till all soft paste may take 2-3 minutes

  • Thats it add nuts and olive oil ,any herbs and pomegranate seeds
