Banana and blueberries cake with cream cheese frosting

Blueberry banana cake

This was like a last minute cake for my friends birthday so had to make with whatever ingredients i had at home,had leftover mashed bananas from the banana bread i made a day ago and only other fruit in the fridge was blueberries and thanks to annie for providing the eggs as my fridge is pretty empty😂really need to go grocery shopping

Blueberry Banana Cake:

  • 2 cups all purpose flour

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup butter room temperature

  • 1 cup sugar

  • 2 large eggs room temperature

  • 1 tsp vanilla

  • 3-4drops banana extract-optional

  • 1/2-3/4 cup bananas mashed, make sure ripe or over ripe

  • 1/2 cup buttermilk room temperature

  • I made my own with adding 1tsp vinegar to milk and sit for 15min

  • 1 cup blueberries add 2tbsp flour to berries so they dont sink, u can use fresh or frozen

Cream Cheese Frosting:

  • 1/2cup butter room temperature

  • 1/2 cup cream cheese do not use low fat and make sure at room temperature

  • 1-3 cups powdered sugar start low and add more tasting sweetness and to add more stiffness if needed

  • 1 tsp vanilla

  • 2drops banana extract optional

Cake:

  • Preheat oven to 350F. Grease three 6" cake rounds, or two 8” pans

  • Beat butter until smooth. Add sugar and beat on until pale and fluffy

  • add eggs one at a time, fully incorporating after each addition. Add vanilla ,banana extract and mashed bananas and mix well

  • Add flour ,salt, baking powder and buttermilk till mixed ,dont overmix

  • Gently fold in blueberries

  • Spread batter evenly intopans and bake for 30mins ,do the tooth pick test

  • Place cakes onto wire rack to cool completely.

Cream Cheese Frosting:

  • Beat butter and cream cheese until fluffy about 2 min Add powdered sugar one cup at a time. Add vanilla and banana extracts and beat until fluffy

Assembly:

  • Assemble with layers of frosting between all layers

  • And on the outside and too of cake

  • U can smooth it completely or keep a rustic look,i used offset spatula as i wanted a bit of “undone” look

  • It is always helpful to keep cake in fridge or freezer for 10-15 minutes after applying thin layer of frosting and then putting on the rest of it to give more smooth or even distribution

  • Top with fresh blueberries and thyme sprigs if desired.

  • This ended up tasting really good ,i used 11/4 cup powdered sugar as the butter with cream cheese held the frosting well,sometimes i dont have good luck with creamcheese frosting😬
