Asian inspired chilli beef with coconut rice

Coconut rice

Very simple and yummy

I used instant pot

It can be made on stove just double the amount of water and increase cooking time to 20 minutes

Pre Soak rice for half hour or longer

  • 1cup basmati or jasmine rice

  • 1/2cup coconut milk

  • 1/2cup water

  • 1tsp salt

  • 1tsp sugar

  • Juice of half lime and zest

On saute setting on instant pot add water ,coconut milk,salt and sugar till it boils

Add drained rice and cook on high pressure for 8 minutes,release pressure squeeze lime juice,sprinkle zest on it and fluff rice with fork and let it stay in pot covered till ready to serve Asian inspired chilli beef

  • 1lbs beef in strips

  • 1large cucumber slightly smashed and torn into bite sized pieces

  • 1red bell pepper diced or sliced

  • Half red onion or 1shallot sliced

  • 6-7 chillies make cuts linearly/make slits, i used mix of green and thai red chillies/use 3-4if want less spicy

  • Garlic5/6 cloves smashed or roughly minced

  • Basil and mint leaves handful each

  • Sesame oil 2tbsp

  • 2tbsp soy sauce

  • 1tbsp fish sauce

  • 1tbsp oyster sauce

  • 1 teaspoon brown sugar or honey

  • 1 tsp chilli garlic sauce or sambel

  • 1tbsp rice vinegar

  • 1/2tsp red chilli flakes

  • 1/2tsp black pepper

  • 3small carrots shaved or thinly sliced

  • Lime or lemon for garnish

  • Micro greens if wanted for garnish

To the beef add all sauces and spices and garlic

Let sit at room temperature for an hour

Heat pan add oil and fry meat till browned reserve the sauce/marinate in pan to add later

Once browned add the reserved marinade and half cup water cover and cook 20 minutes till soft checking midway to stir/add more water if needed

One meat cooked add onion,chillies and red pepper and cucumbers till a bit browned and water almost dry

Will be 3-4 minutes approximately

Add half of mint and basil leaves

Serve along or over rice

Garnish with more basil and mint ,shaved carrots and cucumbers and i used some micro greens and lime wedges
