Seared and broiled arctic char with wild rice and veggies
This is a simple an easy dinner,
You can substitute any veggies,use regular rice or just skip rice!
there’s this amazing seafood store between my work and home and we don’t eat fish too often but when we do it’s always from there
Fish:
Wild arctic char mine was 1.2lbs
3/4tsp salt
1tsp black pepper
1/2 tsp turmeric
1 tsp paprika
1 tsp cumin powder
1/2 tsp red chilli flakes
Garlic 3 cloves minced
Juice of 1 lime or lemon
1 tsp dried parsley
Marinate the fish in all above ingredients for 30 min or longer
Veggies:
1 onion slice
1 tomato thickly sliced
1 green pepper sliced
Baby potatoes cut in quarters
Carrots sliced4 small
Salt and pepper to sprinkle at the end
2 tbsp oil to cook
Cilantro and chives to garnish
Rice:
1 cup Wild rice soak for half hour
1/2 tsp salt
11/4 cup water
1 chicken bouillon cube (u can skip this if u want then add another 1/2 tsp salt)
Cooking rice
:
I used instant pot ,add everything together in instant pot and put on high pressure setting for 28 minutes,let release naturally till all steam out then fluff rice with fork,
Easy peasy!
Cooking veggies:
I cooked them one by one and kept oven on at 300 and put the cooked ones there to keep warm
Heat the pan add oil fry potatoes till little browned,not moving them too much,after 4-5 minutes when done and crisp remove from pan
Then i just fried in same one one by one all veggies ,again not moving to much to char them a bit
At the end i just sprinkle salt and black pepper
Fish:
Put your oven to medium broiler setting now
Add more oil if needed to same pan
Put fish skin side down on medium heat cook 10 minutes uncovered and then 5-7 minutes covered,don’t flip the fish
Then using spoon add the same oil in pan on top of fish and put your pan in oven at broiler setting for 5-8 minutes till golden brown
In your dish add rice at bottom,sprinkle some cilantro on it
Add veggies as you like in the sides and put fish in it
Add rest of cilantro and chives to garnish
